Summer is the season of snacking (🥳) & we’re always looking for bites to pack for a road trip or afternoon at the lake. I always crave sweet treats most, & these homemade muesli bars are the perfect solution for my on-the-go snacking!

If muesli is new to you, you’re in for such a treat – it’s a seriously underrated superstar in the cereal aisle! Muesli is a mix of raw oats, nuts, seeds, & dried fruit that’s just as satisfying & good-for-you as a high-quality granola, but the fact that all of its ingredients are raw also makes it a convenient base ingredient for other goodies, like muesli pancakes, cookies, or granola bars.

In this muesli bar recipe, the muesli takes care of the entire dry mix so there’s no measuring required! Just blitz it up in a food processor with coconut oil & honey, then chill & slice into bars – zero baking involved! Feel free to use whatever store-bought muesli you love most – my personal favorite is the seriously awesome muesli from my friends at Bob’s Red Mill.

Key Ingredients

The best homemade granola bars or bites come together with some combination of rolled oats, nuts, & dried fruit. Since muesli is already packed with the perfect ratio of all of these components, these easy muesli bars come together using just 5 ingredients – it really couldn’t be any simpler!

You need…

  • Muesli – Of course! Use your favorite store-bought blend. My friends at Bob’s Red Mill have a number of awesome muesli flavors. My personal favorite is Bob’s Gluten-Free Tropical Muesli, which is studded with coconut, dried mango, & macadamia nuts – it reminds me of my Hawaiian Grandpa Clarence’s famous homemade granola. 🥰
  • Coconut oil – This healthy oil is solid at room temperature, which helps bind the muesli bars together without any baking required.
  • Sweetener – Liquid sweeteners like honey, agave, & pure maple syrup all work well – use your favorite. Remember, if you’d like to keep your muesli bars vegan, maple syrup & agave are your best options.
  • Chocolate drizzle – Optional but encouraged if you have a sweet tooth like me! You can make perfectly drizzly chocolate by melting dark chocolate chips with the littlest bit of coconut oil.
  • Flaky salt – The perfect finishing touch!

What is Muesli?

Muesli is a traditional European-style cereal made from raw grains, nuts, seeds, & dried fruits. While it’s easy to make homemade muesli, there are plenty of store-bought options these days that eliminate the need to buy all of the ingredients required to create the right blend of flavors & textures. We love Bob’s Red Mill muesli because it’s always made with high-quality ingredients & they have an amazing assortment of flavors!

  • How to pronounce muesli? Say it with us! “Myooz-lee”
  • Are granola & muesli the same? ⇢ Not quite! They’re often made with similar combinations of oats, fruits, & nuts but granola is sweetened & baked, while muesli is raw. We’re probably more familiar with granola here in the U.S., but Europeans love muesli!
  • How to eat muesli? ⇢ Muesli is commonly enjoyed as a cereal or yogurt topper. Since it’s raw, it’s also a convenient, all-in-one option for baked goods like muesli cookies or pancakes.
  • Is muesli gluten-free?Not always, so it’s a good idea to check the package. Bob’s has several gluten-free muesli options, & the Tropical Muesli we chose for this muesli bar recipe also happens to be gluten-free.

How to Make Muesli Bars (No Baking Required!)

No oven? No problem! These no-bake muesli bars are as easy as they sound. All you have to do is pulse the ingredients in a food processor & let the mixture chill. It takes no more than 30 minutes, which includes completely inactive chilling time – simple!

Blitz the muesli. Pulse the muesli & wet ingredients in a food processor until the muesli is coated with sticky-sweet goodness. Why? ⇢ Pulsing breaks the muesli down into smaller pieces & evenly coating them in the coconut oil mixture, both of which helps bind the muesli bars together & eliminates the need for baking.

Chill. Line a loaf pan with parchment paper & press the muesli mixture into a flat, even layer on the bottom of the baking pan. Transfer to the fridge & let it chill until it’s solid. Tip! ⇢ The muesli bar mixture only needs to chill for about 20 minutes, but you can also leave it in the fridge for a few hours.

Slice. At this point, the muesli should be chilled into one large slab. Use the parchment paper to remove it from the pan, then slice into individual bars or bite-sized pieces. Optional chocolate drizzle! ⇢ If you have a sweet tooth like me, I highly recommend finishing the muesli bars with a drizzle of melted dark chocolate & coconut oil. A quick pour is the perfect finishing touch!

Easy Muesli Bar Variations

I’m obsessed with the tropical vibe of these muesli bars, but there are tons of other flavor combinations that you can play with. Feel free to use whatever you love most! A few ideas to get you started…

  • For a fruiter take on a muesli bar, use a muesli that’s especially loaded with dried fruits. Bob’s Red Mill Fruit & Seed Muesli is a great option! Finish with a drizzle of almond butter for the perfect PB&J inspired treat.
  • For an extra kick of energy, use a muesli that’s especially loaded with nuts. Bob’s Old Country Style Muesli is packed with high-energy almonds & walnuts. Their satisfying crunchy texture is just a bonus!
  • Make muesli bites! We love bite-sized snacks on the go. To turn the muesli bars into muesli bites, simply cut each bar in half. You could also roll the muesli mixture into balls & chill if you’d prefer – kind of like our Banana Bread Bliss Balls!

Serving & Storage Suggestions

Homemade muesli bars make a super easy & delicious on-the-go snack for the summer. We love to take them on road trips, cabin weekends, picnics in the park, or lakeside with the family. They’re also awesome with a cup of iced coffee. Tip! ⇢ Wherever you go, keep it cold! The coconut oil in the muesli bar may melt on a hot day, so don’t let them sit out for too, too long.

How to store muesli bars? ⇢ These snacks will keep for about 2 weeks! With their long storage time, muesli bars are great to prep & enjoy throughout a long weekend or vacation getaway. Just keep them in an airtight container in the fridge & snack all week long!

I’m especially partial to the Gluten-Free Tropical Muesli from my friends at Bob’s Red Mill, but you can certainly use whatever muesli you love most. Simply pulse it up with coconut oil & honey, then chill in a pan & slice into bars – easy!

for the chocolate coating:

  • ⅓ cup dark chocolate chips
  • 1 teaspoon melted coconut oil

Instructions

  1. Prepare the no-bake muesli bars: To a food processor fitted with the blade attachment, add the muesli, coconut oil, honey/pure maple syrup, & salt. Pulse until combined, breaking the muesli down into fine pieces.
  2. Chill: Line a loaf pan with parchment paper. Transfer the no-bake muesli bar mixture into the loaf pan, pressing down firmly to pack the muesli mixture into an even layer.   3. Slice & serve: Remove the. chilled muesli mixture from the pan. Use a sharp knife to slice into 8-10 bars or 16-18 bites. If desired, finish each no-bake muesli bar with chocolate coating – place the chocolate & coconut oil in a microwave safe bowl & microwave in 30-second intervals, mixing well between intervals, until completely melted & smooth. Drizzle over the no-bake muesli bars/bites & finish with flaky sea salt as desired. Unlike granola, which is typically sweetened & baked, muesli is typically made with raw ingredients & enjoyed uncooked as a cold breakfast cereal or yogurt topper. Because it’s raw & unsweetened, it’s also an excellent base for any number of baked goods that call for whole grains, nuts, & dried fruit.
