I’ll just go ahead & say it: I’m such a sucker for anything called “goddess.” Goddess bowls, goddess sauce, goddess dressing – if you tell me it’ll make me feel like a goddess, I’m SO in. I bet you can guess how I feel about Green Goddess dressing, right? 😉😍

I’ve always been obsessed with Green Goddess dressing, but also have always wanted to lighten it up a little (or a lot). Why weigh down the gorgeously fresh & fragrant flavor of fresh herbs with tons of mayo & dairy?

I mean…imagine what would happen if instead of weighing them down, we lifted them up with garlic & lemon & honey. That, my friends, is exactly how we got to Herby Green Goddess Vinaigrette. & it is straight-up magic. ✨

Made with fresh herbs (basil! parsley! chives!), lemon, garlic, honey & olive oil, Green Goddess vinaigrette is so fresh, so punchy, & so perfect for taking pretty much anything up a few notches in bright, feel-good flavor.

My go-to pairing? A seasonal salad with tender greens, grilled chicken, & tons of fresh seasonal produce. DROOL. 😋

healthy Green Goddess dressing ingredients:

This Green Goddess vinaigrette is THE recipe I turn to when my herb garden is bursting with fresh goodness. Other than a handful of fresh herbs (literally, just a handful!), you just need a couple of pantry staples…& you can get ready to drown errthang with a Goddess shower. 😉

  • olive oil
  • white wine vinegar
  • lemon juice
  • garlic
  • fresh herbs (think basil, chives, parsley)
  • honey (or maple syrup if vegan)
  • kosher salt

That’s it! So simple, right?

A couple of quick call outs:

  • What herbs to use in Green Goddess dressing?: Whatever you’ve got, honestly! Green goddess is traditionally made with tarragon, chives & parsley. I find tarragons flavor to be a bit too strong for my liking, so I like to swap it out with basil. If you only have green onions, swap them out for the chives. If you hate parsley, swap it out for cilantro. Feel free to tweak it to make it just how you like it!
  • Make it creamy: The ingredients here yield a lighter vinaigrette-style Green Goddess dressing. If you want a creamy Green Goddess dressing, but want to keep it light, simply add plain Greek yogurt to the mix. Nothing crazy, since you want to let the – a few tablespoons will do the trick!
  • Olive oil matters!: When it comes to olive oil, I’m of course partial to DeLallo’s Extra Virgin Olive Oil! How to make Green Goddess dressing:

Making a batch of Green Goddess dressing couldn’t be simpler.

Add all the ingredients to a food processor or blender & blend to combine. The herbs should break down completely, & the powerful blades of the blender or food processor will emulsify the olive oil & the vinegar.

This will result in that super creamy, dreamy texture found in store-bought salad dressings, without weighing the Green Goddess dressing down with any heavy dairy or mayo. An added bonus: the dressing shouldn’t separate much as it sits!

Storage:

Green Goddess dressing will keep, stored in an airtight container in the refrigerator for up to 1 week.

How to use Green Goddess dressing:

Green Goddess vinaigrette is the perfect dressing to turn to whenever you’re craving something bold, bright & fresh. Think of it as an herbaceous sucker punch, your secret green little weapon to dialing up the freshness & flavor in whatever you’re serving it with.

Some of my favorite ways to use Healthy Green Goddess dressing include:

  • tossed into a giant seasonal salad, made with tender greens, grilled chicken, & whatever produce is best at the moment (corn! tomatoes! zucchini! anything!). YAS!
  • Caprese reinvented. Ditch the wimpy basil leaves & shower your end of summer tomatoes & mozz with goddess sauce. Better yet, swap the mozz for burrata or goat cheese. 😍
  • drizzled all over a mountain of grilled veggies (use this post as inspiration!).
  • to dress grilled chicken, grilled steak, grilled fish, or grilled shrimp.
  • tossed into a giant pasta salad.
  • orrr, just by the spoonful. No one’s judging here! 😉
