we had our first 60 degree day of the year on saturday, & let me tell you, it was SO refreshing. chris opened up all of our windows to let some air through the house. i love to keep the big french doors that overlook our backyard open this time of year too. pbr is such a diva & loves to take naps in the warm afternoon sun. it’s so nice to let him roam in & out of the house as he pleases.
plus! we had some friends over for dinner, & it just felt so much like summer. i whipped up some easy pulled pork sliders & a big batch of mango margaritas (recipe coming very soon, don’t worry! ???).
& after what ended up being a really busy week for chris & me both, it was just such a nice way to unwind & have some fun. & it made me really, really excited for all the gatherings & parties that are ahead of us this summer.

the combination of flavors in this strawberry salad is so, so freaking perfect, i can’t even. the berries add a little pop of sweetness in every single bite, which is perfectly balanced by the tanginess of the goat cheese. berries + goat cheese = absolute heaven.
if goat cheese isn’t really your thang go ahead & swap it out for some crumbled feta. the saltiness of feta is also a beautiful pair for sweet berries. salty sweet perfection!!
plus! this strawberry salad gets topped off with some chopped almonds & farro for extra texture. if you’re a texture nut like me, this is absolutely essential, as the salad would otherwise be a little soft – delicate greens, soft berries, you know. almonds are nice and crunchy & farro has a great chewiness about it that i absolutely adore. always try to find a quick cooking farro (i find mine at trader joe’s & whole foods near the rice/grains) because farro otherwise takes a zillion hours to cook. not true, but you get my point. quick cooking farro is where it’s at.

& the best part? drizzling the whole damn thing with homemade maple balsamic vinaigrette. ??? this vinaigrette, you guys. i cannot even.
it’s SO simple & i guarantee you already have everything you need to make it in your pantry already: olive oil, balsamic vinegar, maple syrup, & some s&p. because the ingredients are so simple & straightforward, it’s important to use the best quality you can find. look for an aged balsamic, pure maple syrup, & bust out some extra virgin olive oil. i recently discovered this brand & i’m obsessed. the quality is amazing & the prices are great!
i finish my maple balsamic with some fresh herbs – chopped rosemary & thyme. it’s how we did it at the italian restaurant i worked at out of college, & i’ll never do it differently! the herbs just lend themselves so nicely to the flavor of the vinaigrette. you could also throw in some crushed red pepper flakes too! the kick of heat would be amazing!

Description
an easy & healthy strawberry salad just in time for spring!!! this strawberry salad is loaded with sweet strawberries & blueberries, tangy goat cheese, chopped almonds, farro, and gets topped with simple grilled chicken breast and drizzles of the most amazing homemade maple balsamic vinaigrette. the perfect healthy salad for meal prep, an easy weeknight dinner, or for summer entertaining!
Ingredients
- 4 cups baby arugula
- 4 cups baby spring green mix
- 1 cup farro, cooked according to package directions
- 1 cup strawberries, hulled and halved
- 1/2 cup blueberries
- 4 ounces goat cheese, crumbled
- 1/4 cup almonds, roughly chopped
- Kosher salt & ground black pepper, to season
- maple balsamic vinaigrette
for the grilled herb chicken:
- optional: 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts
- 1 teaspoon Kosher salt
- 1 teaspoon ground black pepper
- 1 teaspoon fresh thyme, finely chopped
- 1 teaspoon fresh rosemary, finely chopped
Instructions
- Cook the farro: Bring a large pot of salted water to a boil and cook the farro according to package directions. I recommend finding a “quick-cook” farro, which will take about 10-15 minutes to cook. Once cooked to al dente, drain the farro and rinse with cool water. Set aside, or store in an airtight container in the refrigerator for up to 1 week. As the farro cooks, get started on prepping the rest of the salad.
- Grill the chicken: Meanwhile, as the farro cooks, grill the chicken. Preheat your grill or a grill pan to medium-high heat. If you’re using a grill pan, add in 1 tablespoon of olive oil. Season both sides of the chicken breasts with the salt, pepper, thyme and rosemary. Once the grill is nice and hot, place the chicken on the grates. Grill the chicken for 6-8 minutes per side, or until the chicken has beautifully charred grill marks and is cooked all the way through. Transfer the chicken to a plate to rest for a few minutes before slicing it into bite-sized pieces.
- Assemble the strawberry salad: In a large serving dish or bowl, arrange the arugula and spring green mix. Top with the strawberries, blueberries, farro, crumbled goat cheese, & chopped almonds. Arrange the sliced grilled chicken over top. Finish with a generous drizzle of maple balsamic vinaigrette. Toss to combine. Enjoy!

- This strawberry salad is great for parties & entertaining: Keep this strawberry salad recipe in your back pocket for summer potlucks – it will be a hit! If you’re serving this salad as an appetizer, feel free to leave out the chicken. Assemble the strawberry salad in advance, dressing it with the maple balsamic vinaigrette only once you’re ready to serve it.
- Meal prep! This strawberry salad makes for a great healthy lunch to pack at the beginning of the week. Cook the farro, grill the chicken, make the maple balsamic vinaigrette, and chop up the strawberries. Store everything in separate airtight containers in the refrigerator. The night before you’ll need lunch, pack a salad in an individual airtight container, packing the vinaigrette separately. At lunchtime, simply toss & enjoy. Easy!
