A semi-homemade approach to completely delicious at-home burritos, ALDI Burrito Night, is one of our favorite weeknight traditions! This easy burrito recipe starts with my go-to homemade chicken fajitas. Thinly sliced chicken breasts soak up a zesty spiced marinade & cook with strips of bell pepper & onion until browned & tender. Stuff the chicken fajitas into tortillas with all of your favorite burrito fixings – cilantro lime rice, beans, salsa, guacamole, & more! – which you can buy ready-made at ALDI for especially quick & easy assembly. This epic chicken fajita burrito recipe is weeknight-friendly, infinitely customizable, & so satisfying – you'll be obsessed!

How to Make Burritos at Home, Easily & Affordably – aka ALDI Burrito Night!

Tacos are a dinnertime favorite here at PWWB. But if there’s one thing that Chris & I love even more than taco night, it’s burrito night. The only downside of burrito night, though, is the fact that a) ordering burritos as often as we crave them racks up quite the takeout bill, & b) making homemade burritos tends to be a high-maintenance project. Between prepping the protein & all the fillings that make burritos so satisfying, it’s easy to spend ages making dinner (& dirty every dish in your kitchen in the process!).

You can understand my excitement, then, when I figured out a semi-homemade approach that results in completely satisfying & flavorful burritos…in 30 minutes or less! It’s a dinner Chris & I have affectionately dubbed ALDI Burrito Night. We’ve been enjoying it since 2020, & I’m so excited to share it with you today!

ALDI Burrito Night starts with my go-to homemade chicken fajitas recipe, which is really quick & simple to throw together – whisk up a fast-yet-flavorful chicken fajita marinade, slice some fajitas veggies, & cook until gloriously tender & browned. From there it’s burrito time!

This is where things get really fun. ALDI has amazing ready-to-serve options that make it so easy to build a chicken fajita burrito assembly line without much of an added cost or effort. Easily transform Earthly Grains Ready-to-Serve Brown Rice into cilantro lime rice, a can of Simply Nature Organic Black Beans makes the burritos extra satisfying, & add-ins like fresh salsa, street corn dip, guac, & shredded Mexican-style cheese create irresistible layers of flavor & texture.

Chicken Fajita Burrito Recipe Overview

This semi-homemade chicken fajita burrito recipe consists of 3 main components…

  1. Chicken fajitas, of course! My go-to homemade chicken fajitas are massively flavorful despite being really quick to throw together – whisk up a simple marinade for chicken, slice some veggies, & cook in a skillet until golden & tender. Simple!
  2. Semi-homemade burrito staples. Simply zhuzh up ready-to-serve brown rice with cilantro lime goodness, drain + rinse canned black beans, & mash together avocado & lime for the quickest faux-guacamole.
  3. Easy store-bought add-ons. Finish your chicken fajitas burritos with Mexican-style shredded cheese, fresh salsa, & flavorful dips & spreads. Convenient, affordable, & flavorful, all thanks to ALDI!

First up! My Go-To Chicken Fajitas

The homemade component of these semi-homemade burritos is my go-to chicken fajitas recipe. It’s my go-to because it results in chicken fajitas that are juicy, rich in flavor, & perfectly browned-yet-tender – absolute perfection! Plus, it only requires simple staple ingredients & it’s super quick & easy to throw together.

How to Make Chicken Fajitas:

Prep a quick chicken fajitas marinade. Mix up a homemade fajita seasoning (chili powder, ground cumin, garlic powder, & paprika), then whisk it up with fresh lime juice, agave or honey, & a little bit of olive oil. The spices create a big punch of flavor, the lime juice brightens & tenderizes, & the agave balances everything with a hint of sweetness that helps make the chicken fajitas brown as soon as they hit the pan.

Slice, marinate, & slice. Start by slicing chicken breasts into long, thin strips. Add the chicken to the marinade, tossing to coat each piece well. Since it’s thinly sliced, the chicken soaks up the fajitas marinade in the time it takes to slice up the fajita veggies. We like colorful bell peppers & onions, though you can easily add mushrooms, tomatoes, chile peppers like jalapeños, or whatever fajita vegetables you love most.

Cook the chicken fajitas. Heat up your favorite heavy-bottomed skillet, then cook the chicken fajitas. It’s best to work in batches to ensure the chicken gets nice & browned while the veggies stay perfectly tender-crisp. I like to cook the marinated chicken first. Once it’s browned & cooked through, transfer it to a plate, then add the veggies to the skillet. The veggies take-on some of the chicken fajitas seasoning left in the skillet as they cook – it’s so good! Stir the chicken back into the skillet & you’re ready for chicken fajita burrito assembly – the whole process takes 10 minutes, tops!

Other Chicken Fajitas Tips & Tricks

Suggested marinating time. Since the chicken is so thinly sliced, it doesn’t need a lot of time to soak up all of the flavor in the fajitas marinade – the 5-10 minutes it takes to prep the fajita veggies & heat up the skillet is plenty. Since the marinade has a good amount of lime juice in it, you don’t want to let the chicken marinate for too, too long. If you’d like to prep ahead, marinate in the refrigerator for no more than 12 hours.

Meal prep tips! Get a head start on your ALDI Burrito Night by doing a little prep ahead of time. You can…

  • slice the chicken & fajita veggies up to 3 days in advance.
  • prep the chicken fajitas marinade ahead of time to make dinnertime even more effortless. Mix up the marinade & store it in an airtight container in the refrigerator for up to 5 days. At dinnertime, simply give it a shake & pour it over the chicken. Easy!

Easy substitutes. We love chicken fajitas burritos, though you can easily make steak fajitas or shrimp fajitas by swapping in your protein of choice. No matter what protein you choose, the fajitas marinade & the process laid out in the Recipe Directions, below, will work well. Similarly, skip the meat & double down on veggies for epic vegetarian fajitas. Use more bell peppers & onions, or add in whatever veggies you love, like mushrooms, chile peppers, or tomatoes.

Easy Chicken Fajita Burrito Add-Ins (from ALDI!)

While the fajitas cook, it’s the perfect time to prepare the chicken fajita burrito add-ins. That way, they are ready, as soon as you need them, for assembly. Luckily, this couldn’t be easier (or quicker!), all thanks to ALDI!

Set up a burrito assembly line with…

  • Cilantro lime rice. Heat up some ready-to-serve rice, then stir in finely chopped cilantro, lime zest, lime juice, & a pinch of salt. I love using Earthly Grains Ready-to-Serve Brown Rice from ALDI. It takes just 90 seconds to warm up in the microwave & it has wonderful hearty texture.
  • Beans. Prepping burrito beans is as simple as opening a can of your favorite beans, & draining + rinsing them well. I’ve written about them before, but I absolutely adore Simply Nature Organic Black Beans. They’re seasoned really well, which isn’t always the case with canned black beans.
  • Guacamole. My quick & easy go-to is simply mashed avocado with lime juice & a pinch of salt. It’s like a faux guacamole & it’s so good – I put it on everything! As an even easier option, pick up convenient Park Street Deli Guacamole Mini Cups from the refrigerator section at ALDI. (It’s usually by dips & cheeses!) Chris & I really like the spicy version.
  • Salsa. Crack open your favorite jar or tub of salsa. I swear that the Simply Nature Organic Salsa available at ALDI is some of the best fresh salsa you can buy!
  • Cheese. Shredded pepper jack or colby jack are always great in burritos. I am obsessed with Pueblo Lindo Shredded Mexican-Style Cheese. It’s one of my favorite ALDI products of all time! It’s mild, creamy, & melts beautifully. So good!
  • Other easy add-ins. Half the fun of burrito night is choosing whatever add-ins you love most! Shred some lettuce. Finely chop a bunch of cilantro. Stir up a quick crema. Or, let ALDI do all the work & grab a tub of Park Street Deli Street Corn Dip, Spicy Hummus, or Mango Pico de Gallo.

Homemade Burrito Assembly

With your gloriously browned & flavorful chicken fajitas ready to go & your burrito fixings arranged into an assembly line, all that’s left is burrito assembly.

*The Secret to Easy At-Home Burrito Assembly.

While large burrito-style flour tortillas aren’t prone to breakage & cracking, it’s much easier to build epic restaurant-style burritos with warm tortillas. Loosely wrap the tortillas in a damp paper towel, then heat them up in the microwave for 30 seconds to 1 minute. The wet paper towel creates steam & adds moisture back into the tortillas, which makes them super soft & pliable. (Perfect for stuffing with as many burrito fillings your heart desires! 😎)

How to Assemble Chicken Fajita Burritos:

  1. Build a base. Place a heaping spoonful of cilantro lime rice in the center of the warm tortilla. Spoon some beans over the rice, then nestle a generous amount of chicken fajitas over top.
  2. Load on the toppings. Work your way through the assembly line, adding whatever burrito toppings look good to you. To ensure a little bit of each topping sneaks its way into every bite, be sure to spread the toppings out across the base ingredients rather than simply spooning them into the middle.
  3. Tuck & roll. Pull the sides of the tortilla up, nestling the fillings into the center of the burrito, then roll the edge nearest to you over the burrito fillings. It’s helpful to use your pinkies to tuck the edges of the tortilla into the burrito as you roll it up. This maneuver can be tricky – just take your time & have fun with it!

Burrito Night Leftovers

Leftover chicken fajita burrito fillings will keep for up to 4 days, stored in an airtight container in the refrigerator. They’re great to use in a burrito bowl, for quick tacos or nachos, as a light-yet-satisfying salad, or, of course, to make more burritos. (On-demand homemade burritos is never a bad thing! 😊)

To keep burrito night quick & simple, I take a semi-homemade approach here, buying some ready-made burrito fixings from ALDI like ready-to-serve rice (just toss in some cilantro & lime!), delicious organic beans (just drain & rinse!), amazing fresh salsa, & other fun Mexican-inspired dips + spreads. 

After just one bite, you’ll understand why we love them so much – they’re insanely delicious & so satisfying. for the chicken fajitas:

  • 1 pound boneless, skinless Simply Nature Organic Chicken Breasts, sliced crosswise into 1/4-inch strips
  • 1 large bell pepper, thinly sliced
  • 1 large red or yellow onion, thinly sliced
  • 3 tablespoons olive oil, divided
  • 1 tablespoon Simply Nature Organic Agave Nectar (can sub honey or brown sugar)
  • 2 large & juicy limes, juiced (about 1/4 cup juice)
  • 1 heaping teaspoon Stonemill Chili Powder
  • 1 heaping teaspoon Stonemill Ground Cumin
  • heaping 1/2 teaspoon Stonemill Garlic Powder
  • heaping 1/2 teaspoon Stonemill Paprika
  • kosher salt & ground black pepper, to season

for burrito assembly, as desired: 

  • Pueblo Lindo Large Flour Burrito Tortillas
  • one 8.8-ounce package Earthly Grains Ready to Serve Whole Grain Brown Rice, prepared according to package directions & mixed with chopped cilantro & the zest + juice of 1 lime
  • one 14-ounce can Simply Nature Organic black beans, drained & rinsed
  • 1 avocado, smashed with juice of 1 lime
  • Pueblo Lindo Shredded Mexican Style Cheese
  • Simply Nature Organic Mild Salsa
  • other burrito fixings of choice: lime wedges, finely chopped cilantro, shredded lettuce, sour cream, etc.

Instructions

  1. Marinate the chicken: To a medium bowl, add 2 tablespoons of the olive oil, the agave nectar, lime juice, chili powder, ground cumin, garlic powder, & paprika. Season with 1 1/2 teaspoons kosher salt & ground black pepper as desired. Add the thinly sliced chicken breasts. Stir to combine well, ensuring all pieces of the chicken are coated in the marinade. Set aside to marinate for 10-15 minutes while you prepare other burrito fixings, or seal & marinate up to 12 hours in the refrigerator.How to make chicken fajita burritos, step 1: Marinate the chicken. Sliced chicken marinates in a mixture of olive oil, agave nectar, lime juice, chili powder, ground cumin, garlic powder, & paprika inside of a large glass mixing bowl.   3. Cook the chicken: Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Once the oil is hot & shimmering, add the marinated chicken from Step 1. Arrange the chicken pieces in a uniform layer across the bottom of the skillet to promote even browning. Cook 5-6 minutes, flipping halfway through until the chicken is cooked through & begins to brown. Transfer the cooked chicken to a plate or bowl & set aside.How to make chicken fajita burritos, step 3: Cook the chicken fajitas. Sliced chicken marinated in spices fills a Yellow Staub cast iron skillet. The chicken has been cooked and browned. The skillet sits atop a creamy white textured surface.
  4. Cook the fajitas veggies: To the same skillet used to cook the chicken, add the sliced bell pepper & onion. Season with 1/2 teaspoon kosher salt & ground black pepper as desired. Cook, stirring occasionally until softened slightly, about 4-5 minutes – the veggies should be tender-crisp. Remove the skillet from the heat. Add the chicken back into the skillet & toss to combine. Place the chicken fajitas in your burrito assembly line for assembly.How to make chicken fajita burritos, step 4: Cook the fajita veggies. Sliced bell Peppers. & onions fill a Yellow Staub cast iron skillet. The fajita veggies have been cooked in oil & seasoned with kosher salt and ground black pepper. The skillet sits atop a creamy white textured surface.
  5. Burrito assembly: Wrap the tortillas in a damp paper towel & microwave for 30-60 seconds, until warm & pliable. Working one at a time, build burritos as desired – we start with a little cilantro lime rice & black beans, then add chicken fajitas & pile on toppings of choice (smashed avocado, cheese, salsa, lettuce, etc.). Tightly roll the burrito – tuck the sides of the tortilla toward the center then roll the filling into the center of the burrito. Repeat with remaining tortillas & enjoy the burritos immediately.

Notes

  • Burrito night tips! Half the fun of burrito night is building epic burritos that are totally suited to your tastes. Some notes:
    • Protein: At our house, we like chicken fajitas, but you could swap out chicken with steak, shrimp, or extra fajita veggies – whatever you love! No matter the protein you choose, prep & cooking will be pretty similar to what’s laid out in the Recipe Directions, above.
    • Fillings: As far as burrito fillings go, pick & choose whatever you love most – feel free to swap black beans for pinto or refried beans, smashed avocado for guacamole, salsa for fresh pico de gallo, etc. You can also have fun with fillings by leaning on the ready-to-serve items available at ALDI – they have an awesome Street Corn dip that’s a delicious add-in, guacamole singles that are great for burrito night, etc. Pick & choose your favorites & have fun with it!
    • Tortillas: No matter the proteins & fillings you choose for your burrito night, it’s important to warm the tortillas well before assembling & wrapping the burritos. Warm, pliable tortillas are much easier to stuff & fold than room temperature or cold tortillas.
  • Storage & Reheating: Store leftover chicken fajitas in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave until warmed through, then assemble burritos or bowls as desired.
  • 10-15 Minute Meal Prep: Nearly all of the active prep work on burrito night comes from prepping the chicken & fajita veggies. Prep them in advance to cut down on active prep required at dinnertime – it takes 10-15 minutes, tops:
    • Slice the chicken & fajita veggies according to the Ingredients List, above. Store in separate airtight containers in the refrigerator for up to 3 days. (10 minutes active prep)
    • Prepare the chicken fajitas marinade according to Step 1 of Recipe Directions, above. Store in a jar or airtight container in the refrigerator for up to 5 days. The day you’d like to make fajitas burritos, all you have to do is toss the chicken into the marinade – so easy! Marinate for at least 10-15 minutes at room temperature or marinate in the refrigerator (covered) for up 12 to hours. (5 minutes active prep)
