These March Recipes Meet You Right Between Winter and Spring

March is a weird month.

It’s not quite winter, not quite spring – just gray, slushy, and unpredictable. One day I’m reaching for heavy sweaters and a pot of soup. The next, the sun is out and I’m cracking open every window in the house.

That back-and-forth shows up in my kitchen, too.

Some days, I’m still craving comfort foods like potato soup during an unexpected snowstorm or braised short rib tacos that make the house smell incredible.

But then something shifts…

It all starts the first time I see asparagus at the grocery store. I start craving a little green, a squeeze of lemon, and lighter dinners. That’s where creamy asparagus pasta, colorful hummus bowls, and garlicky noodles come in – they feel fresh, but are still deeply satisfying.

What to Eat in March is built for that balance. These are the recipes I reach for during cold snaps, muddy days when I finally feel some warmth from the sun on our daily walks, and a few bridge meals for the moments in between.

Here’s to cooking our way toward spring. 🌷✨
