Fresh Recipes for Hot Summer Nights

By the time July rolls around, the heat has usually worn me down a little.

Dinner suddenly feels like a chore if it involves the oven. The kind of heat where even your appetite disappears for a few hours in the middle of the day.

So every year around this time, my cooking shifts completely.

I lean hard into recipes that are simple, straight-out-of-the-fridge, grill-friendly, or barely cooked at all – things that feel refreshing and satisfying without heating up the whole house. Big salads, tomato-heavy pasta, chilled seafood, anything that can be assembled with minimal effort and eaten outside with a cold drink nearby.

Some of my favorite summer meals come from cooking this way.

July food isn’t really about elaborate recipes. It’s about peak-season ingredients doing most of the work. Sweet tomatoes marinated until jammy and juicy. Watermelon and stone fruit eaten constantly. Corn on the cob, grilled hot dogs, make-ahead salads, and something creamy and cold for dessert afterward.
