Few summer dishes are as iconic as Tomato Caprese Salad—and for good reason! It’s light, fresh, seasonal, and always hits the spot on a hot day.
But sometimes it’s fun to play around with the classics! I love giving iconic dishes a twist using super-seasonal ingredients – like adding peaches to Caprese salad. 🍑
Like peak-season tomatoes, summer peaches are juicy and sweet, making them a perfect match for mozzarella and fresh basil. The result? A seasonal salad that’s as low-effort as it is stunning. 💁🏻♀️
This peach Caprese salad is fantastic on its own. Pair it with a crusty slice of grilled bread, and you’ve got summer on a plate. It’s also a great feel-good side for any summery meal. 3 Quick Tips for Success
The beauty of this peach Caprese salad recipe is its simplicity – the fresh, ripe flavor of peak-season ingredients makes it shine! That said, 3 small details help ensure a fantastic result.
#1. Choosing the Perfect Peaches for Salad:
The key to balanced sweet-savory flavor is using peak-season peaches, which are extra juicy and sweet. They’re at their best during the high summer months, July through August.
For best results, choose peaches that are dark orange in color and give a little to a gentle squeeze.
If your peaches are still a little firm, that’s no problem – just let them ripen on your counter for 2-4 days before using in a fresh salad.
#2. To Dress, or Not to Dress?
Traditionally Caprese salad is served with just a touch of good-quality extra-virgin olive oil. When I tried following suit for this peach Caprese salad, I found the result was a bit underwhelming—naturally sweet peaches crave a pop of brightness from a light dressing!
I highly suggest prepping this salad with my go-to White Balsamic Vinaigrette. It’s light, tangy-sweet, and brings all of the fresh summer flavors to life.
#3. Avoid Bruising Delicate Peaches!
To assemble, add all the ingredients to a large bowl and gently toss to combine.
Peaches bruise easily, so work carefully! I use a large spoon to scoop from the bottom of the bowl, under the peaches, to combine without bruising.

Ingredients
- white balsamic vinaigrette (below)
- 2 large peaches, pitted and thinly sliced
- ¼ medium red onion, thinly sliced
- 8 ounces cherry tomatoes (1 heaping cup), halved
- 4 ounces fresh mozzarella ciliegine (heaping ½ cup), halved
- handful fresh basil leaves (1 cup loosely packed), thinly sliced
- kosher salt and ground black pepper, to season
for the white balsamic vinaigrette:
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons white balsamic vinegar (see Recipe Notes)
- 2 teaspoons honey (or pure maple syrup, or agave nectar)
- 1 clove garlic, finely chopped or grated
- kosher salt and ground black pepper, to season
Instructions
- Prepare the white balsamic vinaigrette: Add all listed ingredients to a small bowl or jar. Season with ½ teaspoon kosher salt and ground black pepper as desired. Whisk or shake to combine well. - Assemble the tomato peach caprese salad: To a large bowl, add the sliced peaches, onion, cherry tomatoes, fresh mozzarella, and basil. Season with ½ teaspoon kosher salt and ground black pepper as desired. Drizzle about ¾ of the white balsamic vinaigrette over top. Gently toss to combine well – take care not to bruise the peaches. Taste and adjust seasoning as needed.
- Serve: If desired, transfer to a serving platter. Serve immediately with additional white balsamic vinaigrette and your favorite summer main dishes. Enjoy!

- White balsamic vinegar is a variety of balsamic vinegar that’s a little less caramelly & syrupy than traditional balsamic vinegar – its flavor is a little milder & its color is significantly lighter. I use it here to avoid giving the vibrant peaches and tomatoes a murky appearance. Feel free to substitute with regular balsamic vinegar if that’s what you have on hand.
