Ingredients
Scale
- white balsamic vinaigrette (below)
- 2 large peaches, pitted and thinly sliced
- ¼ medium red onion, thinly sliced
- 8 ounces cherry tomatoes (1 heaping cup), halved
- 4 ounces fresh mozzarella ciliegine (heaping ½ cup), halved
- handful fresh basil leaves (1 cup loosely packed), thinly sliced
- kosher salt and ground black pepper, to season
for the white balsamic vinaigrette:
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons white balsamic vinegar (see Recipe Notes)
- 2 teaspoons honey (or pure maple syrup, or agave nectar)
- 1 clove garlic, finely chopped or grated
- kosher salt and ground black pepper, to season
Instructions
- Prepare the white balsamic vinaigrette: Add all listed ingredients to a small bowl or jar. Season with ½ teaspoon kosher salt and ground black pepper as desired. Whisk or shake to combine well. Taste and adjust seasoning as needed. Set aside, or store in an airtight container in the refrigerator for up to 5 days. Learn more! ⇢ 5-Minute White Balsamic Vinaigrette recipe.
- Assemble the tomato peach caprese salad: To a large bowl, add the sliced peaches, onion, cherry tomatoes, fresh mozzarella, and basil. Season with ½ teaspoon kosher salt and ground black pepper as desired. Drizzle about ¾ of the white balsamic vinaigrette over top. Gently toss to combine well – take care not to bruise the peaches. Taste and adjust seasoning as needed.
- Serve: If desired, transfer to a serving platter. Serve immediately with additional white balsamic vinaigrette and your favorite summer main dishes. Enjoy!
Notes
- White balsamic vinegar is a variety of balsamic vinegar that’s a little less caramelly & syrupy than traditional balsamic vinegar – its flavor is a little milder & its color is significantly lighter. I use it here to avoid giving the vibrant peaches and tomatoes a murky appearance. Feel free to substitute with regular balsamic vinegar if that’s what you have on hand.
Serving Suggestions:
- Portions: As written, this recipe yields a large salad, suitable for feeding 2-3 as a main dish (perhaps with another add-in) or 4-6 as a side dish. To feed a larger crowd at a summer dinner party or, feel free to double or triple as needed.
- Serving suggestions: This tomato peach caprese salad is a great all-purpose summer side dish. We love serving it alongside everything from Bruschetta Chicken to Grilled Tuscan Steak, and everything in between! For a lazy dinner, we also often toss in a quick protein to bulk it up into a heartier meal. To keep things simple, toss in some shredded chicken or my Quick and Easy Grilled Lemon Chicken. For a next-level add-in, cube up some Crispy Parmesan Crusted Chicken or serve with Chicken Meatballs – delicious!
Storage and Make-Ahead:
- This tomato peach caprese salad is best enjoyed fresh, immediately after it’s tossed together. That said, any leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Enjoy cold or at room temperature.
