guys, guys, guys! HAPPY DECEMBER!!! it’s officially december, which means we can officially talk about the holidays, which also means that…treat week is HEREEEEEE!!!
the holiday season is truly one of my favorite times of the year. & one of my favorite parts of the holiday season? aside from the obvious (ahem, mariah carey christmas music), my favorite part of the holiday season is baking & sharing holiday treats.
my love for holiday treats definitely stems from the nostalgia of being a kid & watching my mom create beautiful christmas cookie plates to give away to co-workers, family, & friends who might not otherwise get homemade treats this time of year (…she’s pretty much the best, right?!).
it’s a tradition i’ve sought to bring into my own home as an adult. most december weekend mornings you can find me whipping up a batch of cookies & rocking out to christmas music in my kitchen with some hot coffee. then one sunday, later in the month, chris & i drive around to deliver cookie plates to our loved ones. cookie plate day is one of my favorite days of the year.

if there’s one treat you can always count on being on my mom’s epic christmas cookie plates, it’s chocolate dipped pretzels. she makes the prettiest chocolate dipped pretzels, with different kinds of chocolate & TONS of different toppings.
because i can’t ever let any of our family recipes be (?), i wanted to amp up mom’s classic chocolate dipped pretzels with my own little creation: stuffed dark chocolate dipped pretzels.

i pretty much guarantee that they’ll steal the show of your holiday cookie plate. for whatever reason, people always flip over the combination of chocolate & pretzels. & once you add the element of surprise to classic chocolate covered pretzels with fun fillings, there’s no going back. anyone i’ve served these stuffed dark chocolate dipped pretzels to takes one bite & their eyes light up, like a kid on christmas.

one of my favorite things about these stuffed dark chocolate dipped pretzels is they’re super easy to make, & you can whip up a ton all at once without much effort.
because we’re stuffing the pretzels, there is a little bit of technique involved in making stuffed dark chocolate dipped pretzels, but once you get the hang of it, it’s really a breeze:
- melt the chocolate.
- dip the pretzels.
- fill the pretzels.
- & one final dip!
first, melt the chocolate. nailing the consistency of the chocolate is really important for making chocolate dipped pretzels. it needs to be thick enough to adhere to the pretzels when you dip them, but drizzly enough that excess chocolate drips off the pretzels. my mom always uses chocolate almond bark, which melts nicely & is super cost-effective, but i’m all about using the real deal with the best quality dark chocolate i can find.
the easiest way to melt chocolate for dipping pretzels is to pop the chocolate into a microwave-safe bowl & microwave it in 30-second intervals, mixing the chocolate well between each interval. it is key to mix the chocolate between each interval, to ensure the chocolate doesn’t cook unevenly, or worse – burn.
i like to add some coconut oil to get the chocolate to melt to the perfect dipping consistency. if you don’t love coconut oil, you could use butter too! (???)
second, dip the pretzels. because the pretzels for stuffed dark chocolate dipped pretzels get dipped a few times, it’s important that each coat is a pretty thin coat to avoid loading them up with too much chocolate. first do a quick dunk on the pretzels to give them their first thin coat – be sure to drain off all excess chocolate, then transfer to a parchment-lined baking sheet. i think it’s easiest to use a fork to dunk, drain & transfer. then, use a small spoon to fill the inside of the pretzel with a thin layer of chocolate that serves as the base of the stuffed dipped chocolate.
once all your pretzels have their first dip, pop them into the fridge or freezer for 5-10 minutes to let the chocolate set up.
next, fill the pretzels. here’s where the fun comes in! you’ll fill each pretzel shell with anything your heart desires. i have some of my favorite fillings listed below, as well as a ton of other fun ideas. once the pretzels are stuffed, pop them back into the fridge or freezer to set up for their final coat of chocolate.
& last, the final dunk! finish the pretzels with one final dunk of chocolate, then top decorate them as you please. & that’s it! voila, a boatload of stuffed dark chocolate dipped pretzels. ?

- creamy peanut butter! or almond butter. or cashew butter. or whatever nut butter you love most!
- finely crushed oreos.
- finely chopped peppermint candies! you know those mini candy canes that you always end up getting in holiday gifts at work this time of year? well, you can finally put them to use! crush them up, then mix them into a smidge of melted white chocolate. the perfect peppermint + chocolate treat!
some other filling ideas for stuffed dark chocolate dipped pretzels:
- turtle! finely chop some pecans, then drizzle salted caramel over top.
- snickers! finely chop some peanuts, then drizzle salted caramel over top.
- rocky road: mini marshmallows + finely chopped pecans & peanuts.
- s’mores! marshmallow cream + crushed graham cracker crumbs!
- cookie dough!!!
- finely chopped christmas toffee.
- candy bar! finely chop whatever candies you love most (snickers, milky way, peanut butter cups, m&ms, kit kats, whatever!), & mix them into a smidge of melted white or dark chocolate.
the list could really go on & on, but you get the idea…have fun with it, make them your own by getting creative with flavor combinations you love, & be sure to make a couple extra for yourself…

Description

Ingredients
- 16 ounces dark chocolate, chopped (see Recipe Notes)
- 2 tablespoons coconut oil
- 1 15-ounce bag holiday pretzel rings
- fillings of choice (see Recipe Notes) – salted caramel, peanut butter, crushed oreos, crushed peppermints, crushed candies, etc…
Instructions
- Melt the chocolate: Add the chocolate and coconut oil to a microwave safe bowl. Microwave in 30 second intervals, mixing the chocolate well between each interval, until all of the chocolate is melted and smooth.
- Dip & stuff the pretzels: Create the base of the stuffed pretzels by dipping a pretzel in the melted chocolate, then transfer to parchment paper. Use a small spoon to drizzle chocolate into the hole. You want the pretzels to be sort of like a cup – they should have a solid bottom, but enough of a cup in the middle to catch all the delicious fillings you’re going to add. Transfer to the freezer or refrigerator and chill for 5-10 minutes, until the chocolate sets. Once solid, stuff the pretzels with about ½ teaspoon of filling each, referencing Recipe Notes for some stuffed dark chocolate dipped pretzel ideas. Transfer back to the freezer or refrigerator to chill for another 5 minutes. Once solid, dip the pretzels back into the chocolate, to coat the entire pretzel. Finish with garnishes or drizzles of chocolate as desired. Set in the refrigerator to chill until set.
- Serve and enjoy!
Notes
- Storage: Stuffed dark chocolate dipped pretzels will last all holiday season long. Store them in an airtight container in the refrigerator for up to 3 weeks.
- Chocolate: I always buy a “pound-plus” baking bar from Trader Joe’s this time of year – it’s the most inexpensive way to buy chocolate in bulk! While I love the bittersweet notes of good dark chocolate, you could also easily swap out the dark chocolate with milk chocolate or white chocolate. Whatever you love!
- Fillings are the most fun part about making stuffed dark chocolate dipped pretzels. Some of my favorite ideas are listed below – you need about ½ teaspoon filling per pretzel!
- salted caramel, + a sprinkling of flaky sea salt.
