enter my longest-standing simple snacking obsession that’s been a go-to for the past couple of weeks…a totally craveable 3-ingredient medjool date snack.
this medjool date snack is soooo simple, only requiring 3 pantry ingredients: dates, almond butter, & dark chocolate.
i’ll be the first to admit that we’re not doing rocket science here. sometimes, though, the simplest little pleasures in life are the best.
all you have to do is pit a medjool date & spoon in some almond butter. once pitted, chewy & soft medjool dates make the perfect vessel for creamy, dreamy almond butter. when it comes to almond butter, i always opt for justin’s vanilla. you can of course make your own, but a jar of justin’s is always convenient & delicious.
once the almond butter is spooned into the medjool date, simply pop a piece of dark chocolate in the middle.
viola: these medjool date snacks are the easiest sweet treat you’ll ever make.
this medjool date snack is a perfectly balanced bite. the dates are sweet & have a satisfying chewy texture. they make for a perfect pair to creamy & nutty vanilla almond butter. the snap of beautifully tempered dark chocolate provides just the contrast in texture that the bite needs, while its bittersweet notes complement the nut butter & cut through the sweetness of the dates.

Ingredients
- 1 medjool date
- 1 tsp almond butter
- 1 small piece of dark chocolate
Instructions
- holding the date between your thumb & pointer finger, carefully make a small horizontal slice down the side of the date.
- gently press the date with your thumb & finger & remove the pit.
- spoon 1 tsp almond butter into the center of the date.
- press dark chocolate into the center of the date & almond butter.
- enjoy!
So one of my most asked for appetizers I make is a medjool date stuffed with marscarpone cheese then crammed with a walnut. A teensy bit less healthy than your snack……I, (we, Rich & I) fell in love with dates and eating them this way when we went to a date farm in Palm Springs, CA eons ago…..
