The Easiest Honey Mustard Chicken That Actually Tastes Like Honey AND Mustard 

A spoonful of honey mustard always reminds me of being a kid, dipping my chicken nuggets in as much sauce as my bite could handle. It’s a flavor I reach for when I’m craving a little comfort.

The problem is, most honey mustard chicken recipes are one-note, leaning too hard on the “honey” half of the name, so the results are sticky sweet and nothing else. I want my chicken to taste both sweet and savory—a grown-up version that still delivers all the nostalgia of my childhood favorite.

This hands-off sheet pan honey mustard chicken is a super low-effort dinner with major payoff in honey mustard flavor and crispy, caramelized texture.

The trick, it turns out, is using punchy Dijon mustard instead of yellow to cut through the sweetness, and a touch of apple cider vinegar to keep the flavor from going flat.

Best of all, this version requires no chopping, no marinating, and I usually already have all of the ingredients in my pantry. All it takes is a quick bake-then-broil on a sheet pan to make mega-flavorful chicken, beautifully charred with honey mustard glaze clinging to every nook and cranny! And it is all ready in 30 minutes or less. 🥰

Choose Chicken Thighs For the Juiciest Results

Many honey mustard chicken recipes use breasts or bone-in thighs, but I think that’s a mistake! With leaner breasts, it’s SO easy to dry out the chicken (especially if you want that char), and bone-in thighs take extra long in the oven. I always use boneless, skinless chicken thighs because they’re juicy enough to handle the high heat of a bake and broil and cook up quickly – perfect for weeknights.

How to Bake Honey Mustard Chicken (No Marinade Required)

The flavors of this recipe are similar to my popular honey mustard grilling marinade, but I made a few tweaks to turn it into a more weeknight-friendly glaze. You can prep it in the time it takes for the oven to preheat, slather the chicken, then bake and broil on a sheet pan until juicy and caramelized.

🤓The honey gets a lot of attention, but did you know it’s the brown sugar that makes this chicken sticky? The sugar caramelizes in the oven, combining with the honey as it melts and bringing the glaziness back with a little more substance. With just honey, the glaze would be too thin and watery.

Toss the chicken thighs on the sheet pan with about a third of the glaze – just enough to season the chicken without bogging it down in moisture (you’ll use the rest of the glaze later). Bake at 400 degrees F for 10 minutes.

Keep cleanup to a minimum by lining your sheet pan with tin foil and spritzing it with nonstick cooking spray. No sticky mess to scrub or sheet pan to soak after dinner!

Now it’s time to get that char! Pour off any moisture on the sheet pan (we’re going for browning, not steaming!), then stick the chicken thighs directly under the broiler for about 5 minutes.

Flip, add more glaze, and broil the other side too, until the edges are golden and crispy. This happens quickly, so keep an eye on the sheet pan!

The first time I tested this recipe, I dumped all the glaze on at once, and it was a major fail. The glaze slid off the chicken, pooled on the sheet pan, and turned into a steamy mess. Two fixes made all the difference: adding the honey mustard in three parts and dumping excess moisture off the pan after the first bake. Moisture is the enemy of caramelization!

Serving Suggestions

For the ultimate all-in-one dinner, roast a separate sheet pan of potatoes and broccoli alongside the honey mustard chicken. You could also serve it with smashed roasted Brussels sprouts in the fall (Dijon + Brussels are a match made in heaven) or a lemony broccoli salad during warmer months when you’re keeping oven prep to a minimum.

  • 1 ½ pounds boneless, skinless chicken thighs (see Recipe Notes)
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey (try hot honey for a kick of spice!)
  • 1 tablespoon packed light brown sugar
  • heaping ½ teaspoon each: garlic powder, mustard powder, onion powder
  • 2 cloves garlic, finely chopped or grated
  • kosher salt and black pepper

Instructions

METHOD OVERVIEW:

  1. Mix the quick honey mustard glaze (vinegar – spices). Toss â…“ of the glaze with the chicken thighs and soak while the oven preheats. Roast at 400 degrees F for 10 minutes. Brush with half the remaining glaze and broil 4-5 minutes, then flip and repeat until deeply caramelized and cooked through.

STEP-BY-STEP INSTRUCTIONS:

  1. Prep: Preheat the oven to 400 degrees F, arranging the oven racks so one is in the center of the oven and one is at the top, directly under the broiler. Line a rimmed baking sheet with foil for easy clean up. Spritz with nonstick cooking spray and set aside.
  2. Mix the honey mustard glaze: Add the vinegar, mustard, honey, brown sugar, garlic powder, mustard powder, onion powder, and garlic to a small bowl. Season with 1 ½ teaspoons kosher salt and a few twists of black pepper. Whisk well to combine. Adjust seasoning to taste.

  3. Season the chicken thighs: To a large bowl, add the chicken thighs and about â…“ of the prepared glaze (reserve the remaining glaze for basting). Toss to coat well. Set aside while the oven finishes preheating.
  4. Roast the honey mustard chicken thighs: Arrange the seasoned chicken on the prepared baking sheet in a single layer. (For the prettiest results, start with the de-boned side of the chicken thighs facing up.) Bake on the center rack for 10 minutes.

  5. Finish under the broiler: Remove the baked honey mustard chicken from the oven and preheat the broiler to its highest setting. If the chicken has released a lot of liquid, carefully drain the excess from the pan. Spread half of the remaining honey mustard glaze over the chicken thighs. Return to the top rack, directly under the broiler. Broil 4-5 minutes, until caramelized and golden. Flip the chicken thighs, spread with the remaining glaze, and return to the broiler for 4-5 minutes longer, until deeply caramelized and cooked through.

  6. Serve: Allow the chicken to rest for a few minutes, then slice and serve as desired. We love honey mustard chicken thighs with roasted potatoes and broccoli. Enjoy!

Notes

  • Chicken thighs vs chicken breasts: I strongly prefer using boneless, skinless chicken thighs for this recipe – they’re super flavorful and stay really juicy through baking and broiling. If you prefer to use chicken breasts, pound them flat or butterfly (slice in half lengthwise) for even cooking. Adjust cook times as needed to ensure the chicken is cooked through, and skip broiling (Step 5) to avoid drying out the leaner meat.
  • Storage and Reheating: Transfer cooled honey mustard chicken to an airtight container and store in the refrigerator for 3-4 days. Reheat on the stovetop or in the microwave until warmed through.
