Fresh Recipes for Grill Nights and Summer Gatherings

For so many people, Memorial Day Weekend marks the beginning of summer. But for me, it’s the peonies.

Every June, they burst open all at once – lush, dramatic, impossible to ignore. And honestly, June feels exactly like that too.

This is the month I start saying yes to Saturday morning farmers’ market trips and a really good coffee, berry picking even if it means setting an extra-early alarm, and random dinners outside just because the weather is finally too good to waste indoors.

And the food follows right along with it.

It’s still a little early for peak tomato and corn season, but June has its own kind of magic. The strawberries are impossibly juicy, watermelon suddenly sounds good again, and every farmers’ market seems to have one fleeting ingredient that feels too special to pass up.

So my fridge stays stocked with chilled salads, pasta salads, and easy make-ahead sides that only get better throughout the week – the perfect match for whatever’s on the grill that night.

What to Eat in June is built around exactly that kind of cooking: fresh, laid-back recipes for long nights, easy dinners, and making the most of early summer. ☀️
