Golden Toasted Breadcrumbs Are The Magic Pixie Dust That Makes Any Dish Sparkle✨

Have you ever sat down at a restaurant and been floored by that perfect first bite of silky, tender pasta, finished with the lightest golden crunch on top? 🤤 The tiny textural contrast of toasted garlic breadcrumbs makes a dish feel menu-worthy, and it’s easier to recreate at home than you might think. 

Toasting breadcrumbs doesn’t require any fancy ingredients or advanced planning. Simply grab some store-bought panko (no need to make fresh breadcrumbs from scratch), toss them in a hot pan with garlic powder, and toast for 5 minutes until crispy and golden. It’s so quick and easy, I often make them right as I’m serving dinner. 

Then sprinkle them on anything! I love using toasted breadcrumbs on creamy Mac and Cheese and to add a little texture to a bowl of cozy soup. They’re also the perfect crunchy topping for a simple Mixed Greens Side Salad or Classic Caesar Salad, adding a crouton-like texture without the jaw workout. 

It’s the kind of secret finishing touch chefs swear by—and now it’s yours to enjoy at home, too.

However you use them, these crispy garlic breadcrumbs add that little dash of whimsy that makes any home-cooked dinner—from mac and cheese to soup—feel a little magical.✨

Key Ingredients

Homemade breadcrumbs start with only 3 pantry staples—extra virgin olive oil, garlic powder, and panko breadcrumbs. From there, you can add any other seasonings you love.

Why use panko breadcrumbs? Plain or Italian-style breadcrumbs have a coarse, sandy texture that simply can’t compare to extra-crispy panko. These Japanese-style breadcrumbs are lighter and flakier, and, as a result, absorb less oil for a unique crunch that’s totally superior in my book.

Fresh vs granulated garlic? While I usually preach fresh is best, I actually prefer using garlic powder when toasting breadcrumbs. It’s much less likely to burn in the pan, and the fine granules evenly coat every flake of panko with aromatic flavor.

How to Toast Panko Breadcrumbs On the Stove

One skillet and 5 minutes is all you need to toast panko breadcrumbs to crispy, garlicky perfection. It’s easy to master this simple approach, and then you can adjust it with whatever seasonings sound most delicious to you!

Heat olive oil in a large skillet over medium heat. Once hot and shimmering, toss in the panko breadcrumbs and garlic powder, seasoning with a pinch of salt and pepper.

🧑🏻‍🍳For next-level richness, swap the olive oil for butter. Just be careful not to turn the heat too high. Butter has a lower smoke point than oil and can quickly turn from a gorgeous brown to burned—not ideal!

Stir constantly for 2-3 minutes to prevent the panko breadcrumbs from burning…

…and watch as they turn stunningly golden and fragrant. Once toasted to your liking, transfer to a bowl to cool. If you leave them in the pan, the residual heat may make them a little too toasty!

How do you store toasted breadcrumbs? For best results, be sure to cool the toasted breadcrumbs before storing them in an airtight container. They won’t lose their crispiness, even after several weeks!

Ingredients

  • 2 tablespoons olive oil or unsalted butter
  • 1 teaspoon garlic powder
  • 1 cup panko breadcrumbs


Instructions

  1. Add the olive oil to a large skillet over medium heat. 
  2. Once the oil is hot and shimmering, stir in the breadcrumbs and garlic powder.   3. Transfer the breadcrumbs to a bowl and set aside. Serve immediately, or cool and store in an airtight container. 


Notes

Variations:

  • Add finely chopped, hardy fresh herbs like thyme, rosemary, or sage. Dried herbs work well too, but they have a more concentrated flavor than fresh ones, so half the measurements. 
  • Use fresh garlic or garlic salt instead of garlic powder.
  • Add parmesan or pecorino romano for a nutty, savory twist
  • Grate in fresh lemon zest for a burst of brightness.
  • Spice the toasted breadcrumbs up with furikake or togarashi for umami-loaded, Japanese-inspired breadcrumbs (great with ramen!). 
  • Sprinkle Tajín for slightly spicy Mexican-style breadcrumbs on top of enchiladas or chilaquiles.
