at first glance, coffee & fresh mint admittedly don’t seem like a flavor match made in heaven. but i absolutely promise you it’s one that’s to die for!
i first tried the combo years back when i was trying to lighten up my favorite holiday drink, a peppermint mocha, for both my waistline & my wallet. instead of ordering it as a mocha, i wanted to try peppermint mocha flavors in iced coffee. & omg, i haven’t looked back.
these days i prefer to make my minty iced coffees at home, with Dunkin’ Donuts ® Cold Brew Coffee Packs & using fresh mint instead of peppermint in my own homemade fresh mint syrup. & guys? not to toot my own horn, but i’ve kind of perfected it. this mint syrup is absolutely loaded with fresh mint flavor, but it’s not so cloyingly sweet that it overpowers the flavors of the coffee.

when it comes to cold brew, i’ve said it before & i’ll say it again: i’m completely in love the Cold Brew Coffee Packs from Dunkin’ Donuts. they’re super easy to find (coffee aisle at Target!)
not only do they make a tasty cold brew, they’re SO easy to make & there’s NO mess. all you do is pop the cold brew pack into a large pitcher of water & let it steep overnight.
i actually love using a wide-mouth quart-sized jar for even more ease. the measure lines are right there on the jar for you to add the perfect amount of water, & then you just pop a cold brew pack on in. the jar fits perfectly in my fridge without taking up tons of space.
once it’s ready to drink, just pick out the cold brew pack & toss it out (this is why a wide-mouth jar is key, FYI, i learned the hard way that the pack is impossible to retrieve from a regular mouth jar, haha! ??), then fill the jar up to the top with water to dilute the concentrate to the perfect level of strength.
that’s it!!! no grinding beans, no measuring ground coffee (& inevitably getting it all over the counter & floor), no straining. it’s just so easy! i’m seriously obsessed. the cold brew is tasty on it’s own, of course, & also perfect for a fresh mint cold brew iced coffee!

Description
an easy & refreshing fresh mint cold brew iced coffee served with swirls of homemade dark chocolate syrup. the perfect springtime pick-me-up!
Ingredients
- 1 cup Dunkin’ Donuts Cold Brew Coffee Packs, brewed according to package directions
- 1–2 tablespoons dark chocolate coconut ganache (below)
- 1–2 tablespoons fresh mint syrup (below)
- 1–2 tablespoons half & half (or heavy cream, or milk of choice)
for the dark chocolate coconut ganache:
- ½ cup canned coconut milk (full-fat is best)
- 5 ounces dark chocolate, roughly chopped
for the fresh mint syrup:
- 1 cup water
- ½ cup granulated sugar
- 1 bunch fresh mint (about 1 cup packed)
Instructions
- Make the fresh mint syrup: Add the water, granulated sugar, and fresh mint in a medium saucepan over medium-high heat. Stirring constantly, bring the mixture to a simmer. Once all of the sugar dissolves, turn the heat off. Let the syrup sit in the saucepan for about 5 minutes, to allow the flavors of the mint to continue to steep as the syrup cools. Once cool, strain the syrup out into a jar or resealable container and store in the refrigerator for up to 2 weeks.
- Make the dark chocolate coconut ganache: Place the coconut milk in a medium, microwave-safe bowl. Heat the milk for 30 seconds, then place the chocolate into the warm coconut milk. Stir the mixture together until the chocolate is melted and the ganache is smooth.
- Make a fresh mint cold brew iced coffee: Drizzle a few tablespoons of the dark chocolate coconut ganache in a jar or glass. Fill the glass with ice cubes. Pour the cold brew over top. Stir in the fresh mint syrup and cream. Enjoy!!!
Notes
- I definitely prefer my iced coffees not to be cloyingly sweet, which is why the syrup calls for a 2:1 ratio of water to sugar. If you like a sweet coffee, make the syrup with the traditional ratio of 1:1.
- You’ll have some mint syrup leftover. Make yourself another fresh mint cold brew iced coffee, or use it in cocktails this spring. So good!
