among other things, working from home all day has meant that having feel-good snacks on hand is a total MUST. if i don’t get myself prepped at the beginning of the week with some big ass salad lunch action or a couple of healthy snacks, i’ll definitely get stuck in the trap of grabbing one too many handfuls of store-bought granola or pieces of chocolate throughout the day.

(related side note, have you tried these peanut butter dove eggs yet?! they are the very best – i cannot shut up about them. like, better than reeses pb eggs. the chocolate is next level & the peanut butter is SO good. omg.)

pop some pitted medjool dates into a bowl and cover them with hot water. let them soak for a few minutes, so they get nice & soft. to me, this is kind of the miracle step. yes, fresh dates should be soft enough to pulse up, but soaking them really makes them pulse up like a dream. plus, it leaves you with some naturally-sweetened syrup that you can use as a refined sugar-free sweetener for anything from coffee to cocktails.

the mixture gets pulsed up until it comes together in a dough-like ball that you can easily roll into smaller, bite-sized bliss balls. if the mixture is feeling a little too dry, you can add in some of the sweetened date syrup in to loosen everything up! totally optional, but i also love tossing in a few scoops of collagen peptides. i’m obsessed with the beauty benefits of collagen (hello stronger hair + nails!) & since it’s unflavored, it doesn’t add any artificial or powdery aftertaste to these bliss balls.

5-ingredient bliss balls couldn’t be easier or more wholesome! loaded with dates, cashews, almonds, coconut & dark chocolate, these bliss balls are the perfect little no-bake energy bites to keep on hand as an on-the-go snack during the week or as a healthy little dessert.


Ingredients

Scale
  • 1 cup pitted medjool dates (1112 large dates)
  • 1 cup raw cashews
  • 1 cup raw almonds
  • 2 cups unsweetened flaked coconut
  • 2 tablespoons unsweetened cocoa powder
  • optional: 8 scoops collagen peptides
  • optional: 1/2 cup mini chocolate chips

Instructions

  1. Soak the dates: Add the pitted dates to a medium bowl. Cover with 1 cup of warm or hot water. Let the dates sit and soak for a minute or two, until they’re completely softened and pliable. Drain off the water, reserving it for later use, and set aside.
  2. Make the bliss bites: Transfer the soaked dates to a food processor. Add in the cashews, almonds, coconut, and cocoa powder. If you are using collagen peptides add them in at this time too. Pulse the mixture a few times, to break down the large nuts, then let the food processor run for a minute or two, until the mixture forms a dough-like ball. If the mixture seems too dry, add in some of the reserved date syrup 1 tablespoon at a time. If you are using mini chocolate chips, stir them in by hand at this time.
  3. Roll the bliss balls into 2-tablespoon sized balls. I use a small cookie scoop to ensure the bliss balls are uniformly sized. Enjoy immediately, or store in an airtight container or bag in the refrigerator for up to 2 weeks. I store mine in the freezer – I love them when they’re cold, perfectly delightful with hot coffee! 

Notes

  • A good food processor is key for making bliss balls SO EASILY at home. This is the one I use – highly recommend it! 
  • Collagen peptides boast wonderful health & beauty benefits including stronger hair & nails. I love using them in smoothies & bliss balls. This is my favorite brand!
