it’s one of those dangerously good cocktails.  you know, the kind that are so goooooooood that before you know it, you’ve had one too many but long hair don’t care you’re with your girlfriends & the summery sun is shining & laughs are roaring & life is just good?

rosé, to me, just screams summer.  i don’t think there’s anything more refreshing on a hot summer day than a chilled glass of rosé & some screaming good laughs with my girlfriends. 

& as if rosé couldn’t get any better, paired with a floral & tangy homemade lavender lemonade, it’s ahhhmazing.  these lavender lemonade rosé cocktails are perfectly floral (without being soapy), sweet (but not too sweet), tart (from a good hit of lemon), & dry (the dryness of good rosé cuts right through the flavorful lemonade for perfectly balanced sipping).  plus…so pretty!

they are so pretty & seem so fancy, but let me clue you in on a little secret…

rosé cocktails are super easy to make.  (like SO easy).

it starts with a pretty straightforward homemade lemonade.  this step does take a few minutes, but it’s all work that’s much easier than it seems:  juice some fresh lemon juice from about 7-8 lemons & make a homemade lavender lemon simple syrup. 

the lavender lemon simple syrup is pretty straight-forward (equal parts sugar & water, with lemon zest & lavender buds for flavor), but i add one extra step that takes this simple syrup to the next level.  i came across this internet tip while researching this recipe.  it’s actually quite brilliant & i’m convinced it makes a major difference in the flavor of the lemonade. 

you take a minute to work the lemon zest & lavender buds into the sugar with your hands.  the warmth of your fingers releases the oils from the lemon & lavender.  the aroma & flavor infuses into the sugar, resulting in the most relaxing you’ve done in…probably awhile.

feel free to sit here & inhale the lemony lavender aroma for a minute because it’s SO GOOD.

when it comes to the rosé, you don’t need anything particularly fancy since we’re diluting it with a flavorful & sweet lavender lemonade.  the helpful folks at my favorite wine shop did steer me in the direction of a rosé from provence, since provençal rosés lend themselves to naturally pair very nicely with lemon & lavender notes.

i’d ask the folks at your favorite wine store for their recommendation when it comes to rosés from provence, but seriously don’t invest too much…my bottle was $9.99.  cheap & cheerful!

these lavender lemonade rosé cocktails would be the perfect drink to serve at a bridal shower (because pale pink & bridal showers go hand in hand, right?).  or, make a girls’ night out of it!  pull out your patio furniture & invite your best girls over.  have them bring the snacks & you can take care of providing the girls’ night cocktail. 

or, skip the occasions, & just keep a jar of homemade lavender lemonade in your fridge for lavender lemonade rosé cocktails on demand (you guessed it…this is going to be my approach all summer long…& i highly encourage you to join me!)

Description

lavender lemonade rosés taste like summer! pair your favorite rosé (i suggest a provençal dry rosé) with a homemade lavender lemonade. top it off with a splash of sparkling water, & invite over your girlfriends for a summer girls’ night!!


Ingredients

Scale

for homemade lavender lemonade

  • 2 T dried lavender
  • 2 T lemon zest (the zest of 2 lemons)
  • 1 C granulated sugar
  • pinch sea salt
  • 2 C water
  • 1 1/4 C fresh squeezed lemon juice (the juice of 57 lemons)

for a lavender lemonade rosé cocktail

  • 8 oz rosé wine, chilled (provençal rosé recommended)
  • 4 oz lavender lemonade
  • 2 oz sparkling water
  • ice

Instructions

to make the lavender lemonade

  1. in a small bowl, combine dried lavender, lemon zest, & sugar. using your hands, work the lavender & lemon zest into the sugar for 2 minutes, or so. the warmth of your fingers will release the oils of the lavender & lemon zest into the sugar, giving the sugar the best lavender lemon aroma.
  2. combine lavender lemon sugar with the water & a pinch of salt in a small saucepan over medium heat. heat, stirring often, until the sugar dissolves completely, 3-4 minutes. remove from heat & let the simple syrup steep for 5 minutes before straining out the lavender & lemon zest.
  3. combine the strained lavender lemon simple syrup with the lemon juice*, & store refrigerated in an airtight container for up to 2 weeks.

to make a cocktail

  1. in a 16 oz glass, combine rosé, lavender lemonade, & sparkling water over ice. multiply as needed! cheers!

Notes

  • * as written, the lavender lemonade will be quite strong, as this recipe is intended to be diluted further in the cocktail with rosé & sparkling water. if you wish to enjoy homemade lavender lemonade alone, add in 2 C water into step #3.

      Hi Amanda! As written the recipe will serve 8 but we’ve never tested batching. You can certainly make the lavender lemonade ahead of time with the recommendations in the recipe card & could always double the recipe if you’d like! Hope that helps a bit, please let us know if you give it a try!
