& then it was august.

man oh man, guys, where the heck has this summer gone?

we are settling back in at home in minneapolis after a week of lake house fun in northern wisconsin with my family. every summer my niece & nephew come to spend a few weeks doing the whole “summer at grandma & grandpa’s house” thing with my parents, & this year we ended the visit with a major bang at chris’ family’s lake house.

it was the perfect quintessential lake house weekend: our days filled with splashing, swimming, boating, paddle boarding, tubing, skiing, wakeboarding, & our nights filled with some beers, grilling, &, of course, plenty of campfires with s’mores.

we took a little bit of a breather on checking our cell phones & inboxes, & focused on being present & together, in a place we love dearly with the people we love the most.

as we head into the last full month of summer, there are so many different thoughts & feelings flying through my mind.

this past weekend, as fun as it was, was also the thing i was looking forward to most this summer. from here, august kicks off another busy season of travel, with at least one big trip planned every month from now until the end of the year. the first weekend in september also marks my 30th birthday, a milestone that has me feeling both nostalgic for my 20s & excited for what’s to come.

it’s a funny feeling, for sure. a cross between a calm before the storm & the end of a long, but happy, chapter, if that makes any sense?

i’m kind of wishing we could just hit pause for a few weeks to stretch out this last bit of summery goodness as long as we can before we head into the next season, & everything that will come with it.  

since we obviously can’t, i have a proposal to make: let’s keep august simple. simple, joy-filled, & centered around the best of what the end of summer has to offer. that’s exactly the approach i’ll be taking with the recipes i share on pwwb this month, & it’s the approach i hope i can use to keep me centered & living in the moment all month long. i think you’ll enjoy it, too.

to me, the perfect end of summer salad is one that effortlessly bursts with summery flavors. a dish that uses tons of fresh, seasonal ingredients straight from the garden or farmer’s market, & pairs them with some simple pantry staples to create a dish that’s totally easy, totally fresh, & totally flavorful.

it’s the exact approach behind my lemony grated zucchini salad (which SO many of you guys have enjoyed this summer – it makes my heart SO happy!), & it’s exactly what we’re doing today, with one of my longtime summer faves: grilled panzanella salad.

if you’re not familiar with panzanella salad, it’s a traditional tuscan bread salad that gives day-old italian bread a major makeover with juicy tomatoes, brightly colored bell peppers, & zesty red onions.

i’m giving it a teeny tiny twist, though, by using grilled bread. i don’t typically have day-old bread in my pantry, & when i get cravings for a panzanella salad, i want it now. know what i mean?

Description

Ingredients

  • 2 tablespoons red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 pint cherry/grape tomatoes, halved
  • good, crusty Italian bread, cut into 6-8 1-inch slices
  • 1 red bell pepper, diced into bite-sized pieces
  • 1 yellow bell pepper, diced into bite-sized pieces
  • 1 orange bell pepper, diced into bite-sized pieces
  • 1/2 red onion, thinly sliced
  • 8 ounces feta, cubed into 1/2-inch pieces
  • Kosher salt, to season
  • fresh herbs (oregano, basil, whatever you love), to garnish as desired

Instructions

  1. Marinate the tomatoes: Add the tomatoes to a large bowl with the red wine vinegar, olive oil, and 1 teaspoon Kosher salt. Toss to combine and set aside to marinate while you grill the bread. 
  2. Grill the bread: Preheat the grill to medium-high heat. Once hot, place the sliced bread on the grates, over direct heat. Grill for 2-4 minutes per side, until crusty and charred as desired. Remove from the grill and set aside. Once cool enough to handle, dice the bread into 1/2-inch cubes. 
  3. Assemble the salad: Add the cubed grilled bread to the bowl with the tomatoes. Toss to combine, then let sit for a minute for the grilled bread to soak in the tomato-y dressing. Add in the bell peppers, onion, & feta. Toss to combine. Taste and season additionally with Kosher salt as needed. Finish with a handful of your favorite fresh herbs, & serve. Enjoy! 

Notes

  • Olive oil: It’s important to use quality ingredients in this salad, since it is otherwise very fresh and very simple. This is my favorite extra virgin olive oil. It’s great quality & it’s priced very well.
