A MEDIUM RED ONION
PURE MAPLE SYRUP (OR AGAVE OR HONEY!)
KOSHER SALT
RICE VINEGAR
HOT WATER
Peel & thinly slice the red onion. The thinner the slice, the quicker the pickle! Transfer to a small bowl & set aside.
Add maple syrup, kosher salt, rice vinegar, & hot water to a liquid measuring cup or a small bowl. Whisk to combine, until salt dissolves into the pickling liquid.
Pour the pickling liquid over the thinly sliced onions from Step 1. use a fork to mix & submerge the onions into the liquid as needed. Transfer to the refrigerator & allow onions to pickle 2-4 hours until bright pink in color.
Use the pickled red onions to garnish your favorite dishes! Store in the refrigerator & enjoy throughout the week!
