ROAST THE CAULIFLOWER.

Season cauliflower florets on a baking sheet with olive oil, garlic, powder, smoked paprika, salt & pepper. Roast in the oven for 25-30 minutes at 450 degrees F.

Melt butter in a skillet over medium-heat & add chicken. Season with garlic powder, smoked paprika, salt & pepper. Cook 2-3 mins per side until cooked through with golden edges. Pour in hot sauce & toss to coat then set aside.

COOK THE BUFFALO CHICKEN.

Combine Greek yogurt, garlic, chive or green onions, dill, & apple cider vinegar. Season with salt & pepper & thin with water as needed.

PREP THE HERBY RANCH YOGURT DRIZZLE.

Add rice, greens of choice & shredded cabbage to a large bowl. Pile on buffalo chicken, roasted cauliflower, carrots, & cheese then drizzle with herby ranch yogurt dressing!
