COOK THE RICE

Rinse rice well with hot water in a fine mesh strainer until the water runs clear. Drain any excess water then transfer to a rice pot. Follow the ratios provided on the rice packaging & add water to the rice pot. Cover & cook then allow rice to steam & rest for 5-10 minutes.

Combine all teriyaki sauce ingredients in a small bowl then whisk to combine. Microwave for 30 seconds - 1 minute to allow sugar to dissolve. Stir to combine & then set aside to cool slightly.

PREPARE THE TERIYAKI SAUCE

Lightly spritz a large nonstick skillet over medium heat then arrange sliced Spam in a single layer on the skillet. Cook 4-5 minutes until lightly browned. Flip the spam & reduce the heat to low. Spoon 1 tablespoon of teriyaki sauce over each slice, cooking for 2-3 minutes longer. Repeat 1-2 more times until Spam is browned & saucy.

PAN-FRY THE SPAM & GLAZE

Place a piece of sushi nori (shiny & smooth side facing down) atop a piece of plastic wrap on a work surface. Place the outer box of a musubi mold on the center of the nori such that the long edges of the nori & musubi mold run parallel.

PREP THE NORI & MUSUBI MOLD

Gently add rice to musubi mold, filling almost entirely. Carefully pat the rice down into a uniform level but avoid pressing too much which will create a dense layer of rice. We want light & fluffy rice! Sprinkle with a generous amount of furikake seasoning then arrange two slices of the Teriyaki spam side by side in the musubi mold.

BUILD THE SPAM MUSUBI

Place the musubi mold lid on top of the Spam & press down firmly, simultaneously use your thumbs, pointer fingers, & pinky fingers to pull the musubi mold box up. Set the box to the side & remove the mold top off of the Spam. Pull the side of the nori sheet facing you up & tautly fold it over the Spam. Brush a little water over the opposite edge of the nori then roll the musubi away from you, sealing the musubi shut.

ASSEMBLE & WRAP

Run a sharp knife under warm water, then slice the double musubis in half crosswise (between the two pieces of Spam) to create 2 individual Spam musubi. Enjoy immediately!
