hello pwwb readers – i am so excited to be guest posting for jess today while she is travelling! i’m ellie, the blogger, writer, recipe developer, & food photographer behind hungry by nature. hungry by nature is a gluten free & paleo food blog inspiring others to live a healthy & balanced life, starting in the kitchen! i am a firm believe in the power of food – food is fuel, food is medicine, & most importantly food brings people together around the table.

but there are a few entertaining tricks that i always keep in mind to make hostessing easier:

1. keep it casual. i love hosting backyard BBQ parties in the summer because they are about as casual as it gets.

2. ask for help! there is no need for you to make everything. people are always willing to bring a simple side to the party… chips & guac anyone?

3. make drinks that double as dessert. i mean, there is really nothing better than drinks that double as dessert. 

in the summer, i want something crisp, refreshing, & light. there’s no room for heavy cocktails, or desserts, when the sun is beating down on you & the humidity is out of control.

there are a few steps involved to make these rosemary greyhound boozy popsicles, but don’t let that deter you. first of all, you are going to need to get a popsicle mold. i know, i know… it’s another kitchen gadget. i put off getting one for two whole summers & should not have waited; i immediately regretted all of the popsicles i could have made & eaten during that time! 

you’re also going to need rosemary simple syrup. again, not scary. can you dissolve sugar in water? great!…you can make rosemary simple syrup.

lastly – fresh squeezed grapefruit juice! you can be a total rockstar & squeeze it yourself. rosemary greyhound boozy popsicles

Ingredients

for the popsicles

  • 5 oz vodka
  • 18 oz freshly squeezed grapefruit juice
  • 3 oz rosemary simple syrup

for the rosemary simple syrup

  • 1 C water
  • 1 C sugar
  • 3 sprigs rosemary

Instructions

Make the rosemary simple syrup

  1. Combine water & sugar in a small saucepan over medium-low heat, stirring until the sugar is dissolved. Transfer to a jar & add rosemary. Let the rosemary steep for 1 hour. Remove rosemary & store in the fridge.

Assemble the popsicles

  1. Combine the vodka, grapefruit juice, & simple syrup in a cocktail shaker. Shake for 5 seconds to combine.
  2. Divide the mixture between 10 (3 ounce) popsicle wells. Cover & place in the freezer for 1 hour.
  3. Add the popsicle sticks & freeze overnight.
  4. When you are ready to serve, remove popsicle tray from the freezer & allow the popsicles to thaw for 3 minutes. If you try to pull them out to early, the top of the popsicle could break off in the well.
  5. Enjoy as is or serve in a glass with grapefruit juice!
