GUYS. where the heck is summer going?!?!

for the record, i DO realize i say this every single week. but every time i sit down to write i just cannot stop obsessing over the fact that summer feels like it’s pretty much over & the days already feel like they’re getting shorter & i’m pretty sure i just saw a back to school commercial for target & it makes me WAY sadder than it should given i haven’t been affected by the whole back to school thing for almost a decade.

at any rate. july’s shaping up to be a really, really fun month for me & chris.

my 8-year-old niece & 5-year-old nephew, who live in the boston area, usually spend a few weeks at my parents’ house during the summer months. & since we only really ever see them a couple times a year & they somehow manage to grow 6 inches & turn more & more into little baby adults between every visit (???), the month of july is all about spending some quality time with them.

with only 5 ingredients & 10 minutes of active prep time, these frozen yogurt bites can absolutely be a freezer staple all summer long.

  • smash the berries: first thing’s first, you’re gonna want to mash up the berries with a little bit of honey. if you’re using a larger berry, like strawberries, i find that it works best to chop the berries up a little bit before you try to mash them. smaller, juicier berries, like blueberries, raspberries, & blackberries will mash pretty easily on their own. i’ve made these frozen yogurt bites using all of the above, & they’re really delicious no matter what, so feel free to use whatever looks the best to you at the store! i’m sure citrus fruits would also be tasty – just adjust the amount of honey as needed to sweeten it up!
  • fold in the greek yogurt! a pretty straightforward step. in goes the greek yogurt, & stir ‘til combined! you could, of course, use your favorite flavored greek yogurt in lieu of making your own berry-flavored yogurt, but i love being able to both take advantage of how beautiful fresh berries are this time of year & control the amount of sugar that goes into these frozen yogurt bites. on a related note, i really, really suggest using full-fat greek yogurt in this frozen yogurt bites recipe! nonfat & low-fat yogurt has a much higher water content, which will give these frozen yogurt bites an iciness that you can more easily avoid with full-fat yogurt. plus! full-fat yogurt is so creamy & delish, so there’s that. ?
  • assemble the bites: the greek yogurt mixture gets spooned on top of a base of your favorite granola. i like to use mini paper muffin cups & a mini muffin tin to keep everything standing upright in a nice little bite, but i’ve also successfully made these frozen yogurt bites by placing the cups right on a baking sheet/plate – just be careful when you dollop the greek yogurt in if you go this route!

  • freeze ‘em for at least 2 hours & then…

  • devour.

Ingredients

Scale
  • 1 cup fruit of choice, cut into small pieces as needed
  • 2 tablespoons honey
  • pinch of salt
  • 1 cup full-fat plain Greek yogurt
  • 1 cup granola (use your fave!)

Instructions

  1. Arrange 24 mini cupcake liners in a mini muffin tin, on a plate, or on a baking sheet and set aside.
  2. Make the fruit & yogurt filling: Add the fruit to a medium bowl and drizzle the honey over top. Using a fork or the back of a spoon, mash the fruit with the honey, until the fruit is smashed, with small pieces remaining. If you’re using larger fruit, like strawberries, you can dice it into smaller pieces to help make this a little easier. If you’re using smaller/juicier fruit, like raspberries, they’ll mash pretty easily on their own. Stir in the salt and Greek yogurt and mix until combined.
  3. Assemble the bites by placing a teaspoon or two of the granola in the bottom of each prepared cupcake liner. Top with a spoonful of the frozen yogurt mixture. If you’d like, you can pop a piece of fruit or a sprinkle of granola on top of the yogurt for a fun garnish.
  4. Freeze: Place the frozen yogurt bites in the freezer to set for at least 2 hours before serving. Enjoy!

Notes

  • Storage: Frozen yogurt bites will keep stored a freezer bag or container in the freezer for 2-3 weeks.
  • Yogurt: Full-fat Greek yogurt is the way to go for these frozen yogurt bites! Because it has a lower water content than low- or nonfat yogurt, the bites will be less likely to get that crystalized icy quality to them, making these bites a little creamier – more like frozen yogurt!

    These are soooo good and super, super easy and quick to make. I actually make them in the summertime as a quick breakfast/morning snack, since I often eat all of these items separately in the morning anyway, and it’s a fun change. I wasn’t able to find full-fat greek yogurt in my grocery store (highest I found was 5%), and like Jess says, it did make them a tiny bit icy, so if I was making them for a party where I was going to be a bit more picky about consistency I would probably shop around more to find the full-fat yogurt. But for just my own consumption, I didn’t mind waiting a minute or two for them to warm up a little bit and lose the icy edge.

      I haven’t made these yet but I will in about a week. I told my 2 year olds teacher I would be bringing cupcakes if I could get a little more creative on the treats and bring something will fruit. I’m sure she didn’t want a room full of sugar up 2 year olds. This is just the recipe I need.
