autumn is TOTALLY here in minnesota. despite the fact that we have still been having highs of 90 degrees in the last week, the nights are getting cooler & cooler, resulting in the kind of cool, crisp air in the morning that feels SO refreshing on your face & in your lungs.
& after a crazy summer, autumn’s arrival is like the arrival of a dear old friend.
it feels like coming home again, both literally & figuratively.
we always spend the majority of our summers on the go & away from home. the past couple of weeks, though, chris & i have been able to lay low in minneapolis. it has given us the opportunity to do some things around the house that we’ve been meaning to for (😳…gulp) the past year (um, does that feeling ever go away, though?).
it’s also given us the opportunity also just enjoy each other’s company. we’ve had cozy backyard bonfires (is there anything better?) & we even went on a date to 510 lounge to celebrate our second wedding anniversary. we realized (😳…gulp) that we don’t even remember our last date…like it may have been over A YEAR ago. so it made our special evening even more special (& don’t worry, we’ve vowed that we’ll start dating each other more often in our third year of marriage).
beyond things at home just feeling really solid & good, i also feel like i’m settling into my new routine. after a summer full of hustle, i’m finally catching up to the mile-long list of to-dos.
omg, it feels SO damn good.
& along with the cool & crisp morning air, & the feeling of hominess that’s permeating every aspect of my life lately, comes complete & total cravings for comfort food.
& we’re talking SUPER comforting foods.
hearty bowls of piping hot chili, skillets loaded with the perfect meatballs (recipe coming soon, don’t worry! 😉), & gooey autumn grilled cheese sandwiches destined for a big fat dunk into a bowl of piping hot tomato soup.

honestly, everything you could ever want out of a sandwich.
all of the flavors balance each other out perfectly.
the gouda is obviously the star of the show, bringing the obvious melt-factor that you want out of any good grilled cheese. i looooove using gouda in grilled cheese sandwiches. it melts nicely and also has really great flavor. if you can find smoked gouda, use it! there’s nothing better.
but we don’t stop at melty.
no, sir. autumn grilled cheese sandwiches also need texture, & that’s where granny smith apples come in. they add the perfect amount of crunch!
the flavor party is turned up a few notches with some smoked turkey (my favorite, but feel free to use ham or whatever you love!), tangy whole grain mustard (😏😏😏…just what you need to cut through the richness of the cheese!), & peppery fresh arugula (greens = healthy, right?).
melty, crunchy, smoky, tangy, smoky, peppery….
the only thing missing is a bowl of tomato soup & a cozy night snuggled in blankets with boo thang on the sofa.

- 4 slices whole grain bread
- 2 tablespoons unsalted butter
- 1 teaspoon flaky sea salt
- 2 tablespoons whole grain mustard
- 1 medium Granny Smith apple, thinly sliced
- 1 cup fresh arugula
- 4 ounces sliced gouda cheese
- 8 ounces smoked deli turkey (or your favorite deli meat)
- Preheat a medium, heavy-bottomed skillet over medium heat.
- Assemble the sandwiches! Spread 1/2 tablespoon butter one one of each slice of bread and sprinkle generously with flaky sea salt (this adds major flavor to the sandwich!). On the opposite side of each slice of bread, spread 1/2 tablespoon of mustard. Layer the sliced apple on two slices of bread and top with a piece of cheese. Add the arugula to the other two slices of bread, top with a slice of cheese and the smoked turkey. Gently flip the slices of bread with turkey over onto the slices of bread with the apple, forming sandwiches.
- Cook on both sides until each side is deeply golden brown in color and the cheese is melted, about 3 minutes per side.
- Slice in half and serve with tomato soup. Enjoy!
