well, i think i’m officially an adult.
chris & i closed on our new home yesterday.
i can’t believe the time has finally come & we are homeowners! (eek!)
the past couple of weeks have honestly been a bit of a blur. our entire lives have been carefully packed into boxes & needless to say, i’m chomping at the bit to get going on our move this weekend & begin settling in to the new house.
in the meantime, it feels like every second of the day is accounted for. when life begins to get crazy, i have a tendency to not plan out meals & instead just grab whatever is easy. this usually means lots of chipotle, pizza, or food from the cafeteria at work.
now, there’s nothing wrong with pizza, or chipotle, or food from the caf, but these convenient choices do begin to add up – taking a toll on both my wallet & my energy levels.
so this time around, i’ve been making a special effort to keep us fueled with satisfying & healthy meals.
the key has really been #mealprepsunday. it’s no secret that i’m such a fan of make-ahead meals. with just a little planning in advance & a little organization over the weekend, you can set yourself up with a week’s worth of delicious meals that will come together faster than you could order pizza or pick up chipotle.

All the noms!! I need to get better about meal prep, but it is such a lifesaver somedays. We usually always have baked white and sweet potatoes in the fridge and maybe some kind of ground meat already cooked. Thanks for including me 🙂
